Humbrol colours
One colour which is a relatively decent tone for a number of German uniform colours is Humbrol Slate Grey number 31. Add a little blue or a little green can realize several colours matching the various uniform tones. It is also very handy for highlighting if you add Flesh and Dark Grey (32) for shadows.

The colour of gernam, field tunics varied considerably during the war.
The M36 tunic came in a varity of shades of field grey (Humbrol 31 slate grey used to be a good match)
M43 tunics were often a much darker grey. This has often been described as steel grey.
By the time the M44 uniform appeared there were at least 3 colours
Italian cloth a grey colour
Steel grey
dark field grey
In addition to these tunics troops were also issued with a denim version of their tunic which was more of a dark green colour known as reed green. this seems to have varied from a field grey colour to a dark almost bottle green.

My approach to field grey is pretty standard but I like the results very much. I think the colour is quite a good match when compared to photos and references.
I use either Humbrol #30 or 31 - one of these is the colour I use exclusively. I don't have it on hand but I think it's #30. It is a greyish-green which I apply on the figure out of the tin.
When dry, I apply a wash of Payne's Grey which considerably tones the green down.
I then apply shadows by mixing Humbrol #30 (40%) with Payne's Grey (60%) and then
I add Humbrol "Flesh" to the highlights - Humbrol #30 (40%) with Payne's Grey (60%) - colour until I attain a decent tone change. You will need to add quite a bit of Humbrol "Flesh" to the mix to lighten up the paint. The key here is to add highlights subtly and in small doses. It may not show up immediately but I can assure you that if you can restrain putting too much on at once and just apply overlapping layers little by little, the results will really pay off
